A little about me…

So my journey began about 2 years ago. Back then my life consisted of eating copious amounts of chocolates, sweets, crisps and various other junk foods while additionally spending most of my time in GP practices. I was generally quite unhappy with a lot of things in my life including how my body looked and the constant battle with trying to resist highly sugary foods. I was consumed by a whole host of health issues such as IBS, chronic fatigue, persistent urine infections, thrush and a weak immune system. After undertaking 2 separate 1-year long courses of antibiotics to treat ongoing cystitis and acne I had unknowingly been causing more and more damage to my body’s ecosystem. Everything was off balance and my gut was slowly paying the price.

Let’s fast forward to about a year ago when, after being in despair that absolutely nothing I was taking was actually doing anything, I decided to take matters into my own hands. Weeks of research and reading various articles and books, I decided I was going to cure myself from the inside out and by focusing on my gut I was soon to find out that for the first time in 2 years, all of my other health issues could be eased. Most illnesses start and end with the gut. The stomach is lined with a barrier that we need to protect and once toxins penetrate their way through this barrier they enter the blood stream making their way around our bodies and whacking our system off balance.

So I’m sure you are thinking at this stage that in order to help myself, I restricted myself from eating anything remotely flavoursome and lived on rabbit food for a year….wrong! The wealth of knowledge I have gained over the past year has opened my world to whole new way of eating. There is nothing I hate more than the word ‘diet’ as a ‘diet’ is not sustainable. Being healthy is simply about having a healthy relationship with food and not being afraid to try new things. If someone had said to me a year ago that I would never crave a pack of maltesers ever again I would have laughed in their face! I also never thought I would hear the words ‘salted caramel millionaire shortbread’ and ‘healthy’ in the same sentence but these things ARE possible. Our earth provides us with a multitude of different foods that we simply don’t take enough advantage of. Drastically changing the way you eat isn’t something that will happen over night, but if you are someone like me, who is fed up of leaving your health in the hands of other people, then why not adopt a new approach – you never know until you try!

My aim in this blog is to inspire you to get creative in the kitchen and to shake up what you thought you knew about certain foods. So many people ask me how on earth I’ve managed to make desserts and treats that look and taste like they should be sending you on a one way trip to a diabetic ward yet are actually packed full of nutrients and are so guilt free! It’s all about taking it back to the basic and making the most of what our planet has to offer.
